How Bespoke 77 Helped Pomus Open Its Doors — and Keep Them Open

From first concept to multi-site operation — how a trusted supply relationship built from day one gave Ryan Jacovides everything he needed to launch and grow Pomus across Kent.

The Client

Pomus is a neighbourhood restaurant, wine bar and bottle shop rooted in the creative energy of Kent’s coast. Founded by Ryan Jacovides in Margate — a town he’d been visiting with his family for generations — Pomus is built around the philosophy of good produce, good wine and good people. The menu changes with the seasons, shaped by what’s growing and what feels right: low-waste, inclusive, thoughtfully cooked.

Ryan brings decades of industry experience to the venture, having served as Group MD at Jamie Oliver Group, working with White Rabbit Projects and Megan’s, and as a founding partner of the Bristol-based Pasture Restaurant Group. With the Folkestone site opening within a year of Margate, and Pom on the Pier — a smaller waterfront concept — following shortly after, Pomus is growing fast, and doing so on its own terms.

The connection with Bespoke 77 predates Pomus itself. We had worked with Ryan across his time at other restaurant groups, building a relationship grounded in trust, shared standards and a mutual understanding of what great hospitality supply looks like.

Starting from Scratch — and Getting it Right

When Ryan decided to open his own restaurant, he faced the challenge every new operator does: sourcing everything from scratch, across dozens of product categories, under the pressure of a launch deadline — while maintaining the exacting standards a hospitality professional of his experience would demand.

Off-the-shelf ranges from a single supplier rarely tell the full story. The right plate for one course isn’t always the right plate for another. The glassware that works in a wine bar isn’t always the glassware that ships fastest. How We Tackled It

When Ryan came to us ahead of the Margate opening, we approached it as we do every new client brief: we sat down, understood the vision, and worked through every product category together. Nothing was assumed. Everything was sampled.

Full Product Consultation

We worked through every category Pomus needed to launch — ceramics, glassware, cutlery, serving pieces, kitchen equipment including gastronorms and induction hobs, and branded items including greaseproof paper. Rather than pushing our own products first, we mapped the full requirement and matched the right source to each line: UK partner stock where speed and price were the priority, our own stocked ranges where quality and value aligned, and bespoke production where nothing else would do.

Sampling Before Commitment

Before any order was placed, we sent physical samples across the full range. Ryan and his team could handle, test and assess every piece in the context of a real kitchen and a real dining room. The sample process isn’t a formality at Bespoke 77 — it’s how we ensure clients only commit to things they genuinely love.

Bespoke Pieces from Scratch

Two standout pieces were developed entirely from scratch for Pomus. First, branded greaseproof paper — a detail that matters when every surface of a restaurant tells a story. Second, and more distinctively: a terracotta hexagonal wine rack module, designed to stack and interlock in a honeycomb formation. The result is a statement display piece that is entirely unique to Pomus, and practical enough to be rearranged as the space evolves.

Stock Holding & Ongoing Supply

Once Pomus Margate was operational, we established a stock holding agreement — meaning key lines are held in our warehouse and available for reorder on demand. When Folkestone opened within a year, the full Margate product history meant we could replicate and adapt the supply programme rapidly. No starting from scratch. No delays. No guesswork.
